La Grée-Saint-Laurent, en breton Ar C'hrav-Sant-Laorañs, doit une partie de son toponyme à Saint Laurent de Rome qui est le saint patron de la commune et de l'église paroissiale. Saint Laurent de Rome est un martyr ; il tient donc une palme du martyre. Ayant été condamné à la mort sur un gril, il voit cet instrument comme signe distinctif principal et peut être accompagné par d'autres objets. Il porte souvent une dalmatique.

Grée dériverait du latin Grada = pente ; en breton, nous retrouvons le mot Grav - prononcé Grao, signifiant côte, pente ascendante, colline pierreuse.
