L'immense majorité des toponymes de Achiet-le-Grand datent des temps les plus anciens, parfois du néolithique ou de la période préceltique, notamment les oronymes et hydronymes.

Achiet-le-Grand est attesté en 1081 dans le chapitre de Saint-Amé sous la forme Asceel. Le cartulaire de l'abbaye de Saint-Vaast le signale en 1098 sous une forme identique, Ascehel. Nous voyons un Hasceel en 1136 puis un Ascei dans le cartulaire du Chapitre d'Arras en 1154, puis un Aissiet en 1156. Le cartulaire du Chapitre d'Arras nous dévoile aussi un Aisseri en 1159, ainsi que des Aiscie, Aisseie en 1216 et 1262 ; ceci pour ne citer que quelques formes anciennes de ce toponyme.

C'est à partir de 1434 que l'on remarque la distinction entre Achiet-le-Grand orthographié alors Achiet-le-Grant et Achiet-le-Petit.

Il est distrayant de noter un Assiette-le-Grand en 1585.
